DECEPTIVELY DELICIOUS SPINACH SALAD

My husband, Mike, is not a huge vegetable person. He will eat them when cooked the way he likes them, but it has been a huge accomplishment for him to even just tolerate a tomato. When we first started dating we went to my parent’s house for dinner. My mom fixed a wonderful spinach salad as a side. To this day it surprises me he ever even tried it (he must have still been trying to impress them), but he ended up having 3 servings!

So here’s a “deceptively delicious” spinach salad. Add it to your holiday meal for some great nutiritonal value (it is rich in calcium and fiber, which keeps you fuller longer). Or add some grilled chicken or tuna, and make it as a light and easy meal.

DECEPTIVELY DELICIOUS SPINACH SALAD

1 1/2 LB Baby spinach (remove stems)
1/2 LB Mushrooms sliced
4 slices cooked bacon chopped
Pepper to taste

Dressing:
1/2 cup olive oil
3 tblsp white wine vinegar
1 tblsp finely chopped onion
2 tsp dijon mustard
1 tsp salt
1 tsp sugar

Note: The dressing should be tossed with the salad for even coverage. Use sparingly for an even healthier option.
