RAW DIET DAY 4 + RECIPES

I woke up at 5am this morning, with a more determined, and focused mind. I had more energy than normal in my 6am cardio/sculpt class, and found out I already lost 5 pounds! Losing weight is not my objective (preventing illnesses and injury, and having energy are). However, as long as I maintain a healthy weight, I’m not against losing it… :)

The day just got even better… I have a friend who comes to the studio named Ashley. She has shed major pounds in the past 6 months she’s been coming to Kadi Fit. She runs each morning, does several classes a week, and started a raw diet. Yesterday she lent me three books on raw dieting. One of them has a recipe for Muesli. This recipe has greatly excited me. You have NO IDEA how much I love oatmeal. I have eaten it almost every morning for 5 years!

One problem I’ve run into with raw diet recipes, are the amount of crazy ingredients you need that I don’t have. Here are a couple simple recipes that I have found…

From “Raw Food Made Easy” by Jennifer Cornbleet

Muesli
1/2 cup rolled oats
2 tablespoons raisins
1 tablespoon raw chopped nuts
2 tablespoons raw sunflower seeds
2 tablespoons raw honey or whole cane sugar
1/2 cup almond milk
1/4 cup fresh berries

To make it softer, you can soak the oats overnight in the almond milk.
This recipe can even be stored in a pantry for up to 3 months (adding the almond milk and berries later). So make a large batch and you will have quick and easy breakfast on hand!



Guacamole
Serves 4

3 Avocados, pitted
1 onion, diced
2 tomatoes, diced
2 sprigs fresh cilantro, finely chopped
Juice of 1 lime or lemon
1 gloves garlic
Cayenne pepper to taste
Sea salt to taste
1/2 cup coconut water or purified water (or more to get the right consistency)

Scoop the meat from the avocado skin. Cut the avocados into chunks, place in a large bowl, and mash with a spoon.

Gently stir in the onions, tomatoes and cilantro. Squeeze in the lime juice and stir in salt to taste. Add the water as desired. Mmmm!

Tip: This recipe is great with flax seed crackers, carrots, celery, broccoli, and bell peppers.

    We love Muesli!!! I have been making it with coconut water (harvest bay brand) instead of almond milk. It sounds funny, but its really good! There is an ingredient in the almond milk that is really unhealthy. I love it with ground flax seeds, crasins & cashews:)

    Oh, that’s good to know! Almond milk is delicious, but next time I’ll try coconut. I’ve heard it’s awesome too. I first discovered muesli on my honeymoon in Anguilla, so it has a special place in my heart. :)
